Get ready to embark on a culinary journey as you put on your hiking boots and embrace the adventures that await you at Rock Hollow Woods. Join Ron DiBenedetto from Devour Catering for a unique dining experience that will tantalize your taste buds amidst the breathtaking beauty of the woods.
The evening will commence with a welcome toast, followed by an appetizer station in one of our many scenic locations. A delightful 4-course meal will be served in our charming stone pavilion, with a LIVE auction featuring select items, and networking opportunities to meet and engage with others who share our commitment to Rock Hollow Woods' mission. As this is a special event, seating is limited.
Proceeds from the event will support our efforts to provide children with outdoor opportunities to discover and learn about the natural world, fostering a sense of environmental stewardship.
After registering, guests will be asked to make a selection from the appetizer and entree options listed below:
Appetizer:
Option 1~ Mushroom Trio
A delightful medley of three stuffed mushrooms served on a fresh bed of peppery arugula. Savor the rich flavors of crab-stuffed mushrooms, savory sausage-stuffed mushrooms, and creamy spinach & cheese blend mushrooms, each offering a unique taste and texture.
Option 2(V)~ Loaded Bruschetta
A lovely twist on the classic! Crispy, toasted baguette slices topped with a vibrant mix of diced tomatoes, fresh basil, and a drizzle of balsamic glaze. Loaded with creamy mozzarella, roasted garlic, and a sprinkle of Parmesan, this dish is finished with a touch of olive oil and sea salt for the perfect bite of savory goodness.
Entree:
Option 1~ Braised Short Rib with Bordelaise Sauce
Slow-braised short rib, tender and flavorful, enhanced with a rich Bordelaise sauce and topped with crispy onion garnishes. Paired with perfectly grilled asparagus and velvety caramelized onion sour cream mashed potatoes, creating a harmonious blend of savory, sweet, and creamy flavors.
Option 2~ Grilled Salmon with Sweet Mustard Hollandaise
Perfectly grilled salmon, glazed with a tangy-sweet mustard hollandaise sauce. Paired with tender grilled asparagus and velvety caramelized onion sour cream mashed potatoes, creating a balanced and flavorful meal with every bite.
Option 3(V)~ Slow-roasted Spaghetti Squash Nest with Garden Vegetables
A tender, slow-roasted spaghetti squash nest, topped with a vibrant medley of fresh garden vegetables. Paired with perfectly grilled asparagus and creamy caramelized onion sour cream mashed potatoes, this dish offers a light yet satisfying balance of flavors and textures.
All guests will receive:
Salad: Chef’s preparation of local seasonal greens folded into a signature champagne shallot vinaigrette accented by slow-roasted tomatoes, red onion, and Parmesan crisps.
Dessert: Decadent cheesecake perfectly complemented by a refreshing blackberry compote, adding a burst of fruity flavor to balance the sweetness.
